Dish & Glass Rack Guide: Sizes, Types and the Right Fit
Racks are the least glamorous purchase in a dish room and one of the most consequential. The right rack protects your glassware, holds items at the angle that actually lets water reach them, and lets a machine hit its rated throughput. The wrong rack chips stemware, shadows plates so they come out dirty, and quietly caps the capacity of a machine you paid a premium for. The Standard That Makes Everything Fit
Most commercial warewashing is built around a 500 × 500 mm rack footprint. It is the reason a machine's capacity is quoted in racks per hour, and the reason racks from different suppliers usually interchange.
That matters practically: it means you can standardise a single rack size across under-counter and pass-through machines, move racks between stations, and buy replacements without re-engineering your workflow. Glass Racks: Open vs Compartment
This is where most operators get it wrong.
Open racks have no dividers. They take mixed items and maximise the number of pieces per rack. Fine for tumblers and sturdy glassware; poor for anything fragile, because glasses touch.
Compartment racks divide the rack into cells — commonly 16, 25, 36 or 49 compartments. Each glass is isolated, which prevents contact chipping and holds items upright so water reaches the interior. Fewer glasses per rack, far less breakage.
Extender rings raise the effective height of a compartment rack, letting you wash tall stemware in a rack that would otherwise be too shallow.

Plate, Peg and Flat Racks
Peg racks hold plates upright between pegs, spaced so water reaches both faces. Peg spacing determines the plate diameter you can wash — measure your plates before you buy.
Flat or open racks take mixed items, trays, and awkward shapes. Versatile, but items must be arranged so nothing shadows anything else.
Combination racks mix peg sections and open areas for kitchens washing varied loads.
The most common plate-washing failure is not the machine — it is plates packed so tightly they shield each other from the spray.
Cutlery: Baskets or Flat
Two approaches, and the difference shows up in your labour:
Cutlery baskets stand items on end in cells. Simple, compact, but pieces nest together and can trap soil.
Flat cutlery racks lay items in a single layer, fully exposed to the spray. They wash more reliably and dry better, which means less hand-polishing afterwards.
If your team is drying cutlery by hand, you are paying labour to compensate for a rack choice.

How Many Racks Do You Actually Need?
More than you think, and this is where operators under-buy. Racks are not just what goes through the machine — at any moment you need racks:
Loading on the soiled side
In the machine
Cooling and drying on the clean side
In storage or transport, especially in catering and events operations
A practical starting point is roughly three to four times what your machine holds at once, adjusted upward if wares sit in racks between services or travel off-site. Running short forces staff to unload wet racks immediately, which slows the line and defeats the drying step.
Handle and Store Them Properly
Racks are consumables with a long life if treated well and a short one if not:
Do not use racks as step stools or shelving
Replace racks with broken tines or pegs — they scratch and chip wares
Store off the floor, on a rack shelf or trolley
Keep soiled-side and clean-side racks separate so you are not carrying contamination back across the station

Do your racks match your machine's footprint?
Is fragile glassware in compartment racks rather than open ones?
Do you have extender rings for tall stemware?
Does peg spacing suit your actual plate diameter?

Do you hold three to four times the machine's capacity in racks?
Are damaged racks taken out of service?
